Homemade, it suddenly tastes completely different—much more flavorful and without any unnecessary additives. This homemade meatloaf from the oven turns golden brown and crispy on the outside, juicy and delicately seasoned on the inside, just like the kind you get from the deli counter. Simply mix it, pour it into the dish, and the oven does all the work. A warm slice with mustard, and everyone’s back in the kitchen.

Ingredients: 800 g very finely ground pork, 200 g ground beef, 250 ml ice-cold water, 20 g curing salt (nitrite), 1 small finely grated onion, 1 tsp black pepper, 1 tsp marjoram, 1 tsp garlic powder, ½ tsp nutmeg, and 1 tsp baking powder.

Chill the meat thoroughly for about 30 minutes. Then, place it in a food processor along with the curing salt, pepper, marjoram, garlic powder, nutmeg, and baking powder.

Gradually add the ice-cold water and process until a very fine, smooth, and sticky mixture forms. Finally, stir in the grated onion evenly.

Transfer the meat mixture to a greased loaf pan or casserole dish, press down firmly, and smooth the surface. Use a knife to make a shallow, lengthwise indentation in the surface.

Bake in a preheated oven at 180°C (350°F) for about 60–75 minutes, or until a golden-brown crust has formed.

Let it rest briefly before slicing. Serve warm with sweet mustard, a pretzel, and potato salad, or cold in a roll. Enjoy!
