Restaurant salads never taste better because of the salad itself, but always because of the dressing. This restaurant-quality salad dressing takes just ten minutes to make and transforms any bowl of greens into something everyone will be asking for. Creamy, flavorful, perfectly balanced, and made with ingredients you probably already have at home. Mix it once and it’ll be ready to use in your fridge for days. One spoonful and you’ll never open a store-bought dressing again.

Ingredients: 200 ml neutral oil, 200 ml white balsamic vinegar, 200 ml vegetable stock, 50 g sugar, 20 g salt, ½ tsp pepper, 200 g sour cream or crème fraîche, 200 g plain yogurt, 60 g medium-hot mustard, and 1 tsp dried salad herbs.

Combine the vinegar, oil, vegetable stock, sugar, and salt in a saucepan and simmer gently for about 1–2 minutes. Then let it cool briefly.

Add the sour cream, yogurt, mustard, pepper, and herbs. Blend everything with an immersion blender until smooth and creamy.

Pour into very clean bottles, let cool completely, and refrigerate immediately. Shake well before each use.

This sauce is wonderful with leafy green salad, cucumber salad, tomato salad, or mixed salad. Enjoy!
