Ingredients: 12 large potatoes, 3 onions, 2 eggs, about 8 tablespoons of flour, salt, pepper, and enough oil for frying.
Peel and coarsely grate the potatoes. Finely dice the onions and add them to the grated potatoes along with the eggs. Season generously with salt and a little pepper.
Gradually stir in enough flour until the mixture holds together well. Depending on the moisture content of the potatoes, you may need a little more or less flour.
Heat enough oil in a frying pan. Drop portions of the potato mixture into the pan, flatten them slightly, and fry the potato pancakes until golden brown and crispy on both sides.
Then drain them on paper towels and serve hot. They go well with applesauce, herbed quark, or smoked salmon. Enjoy!
